Red Chicken Biryani


Chicken biryani is a very popular non-vegetarian south-indian dish. However, in this Red Chicken Biryani is slightly modified from traditional chicken biryani dish. I really hope will enjoy this dish!

Cooking utensil

Ingredients:

  • 2 cups of Basmati Rice
  • 6 chicken drum sticks
  • 2 Onions and Green Bell Peppers (different colors if possible)
  • Ginger and Garlic paste
  • half cup green peas
  • 1 cup chopped Tomato
  • 1 cup Yogurt
  • Paparika powder; Turmeric powder;
  • Cilantro
  • 1 cup mix of cashew nuts and Raisins
  • Cumins, Bay Leaves and Red dired chillies
  • 1 cup mix of cashew nuts and Raisins
  • Cardamoms, Cloves , and Cinnamon
  • Garam masala powder
  • 1 cup mix of cashew nuts and Raisins
  • Salt to taste
  • 2 Tbsp Sugar
  • Red food color
  • Vegetable oil
  • Butter (One Stick)

Instructions:

  1. Clean chicken drum sticks; add 1 tbsp garlic and ginger paste, half teaspoon of turmeric, chilli, and coriannder powder; 1 tbsp Garam masala; 1 half teaspoon food color and salt to taste. Mix well, and let it marinate for at least 15 mins
  2. In a hot pan, add 1 tbsp spoon oil or butter, next, add the marinated chicken in the hot pan, and cook for 10 mins on a high heat until it gets nice red color. And remove the chicken in a separate plate


  3. In the same pan, add cumin seeds, bay leaves (4), 1 cinnamon stick, 4 cloves, 4 cardamoms, and dry chillies (4). Once roasted, add 2 tbsp butter, and finally add chopped onions and bell peppers. Fry until light brown, and remove it in a separate plate.
  4. Take a pot, add 2 tbsp of butter, cumins seed, bay leaves and dry chillies. Once roasted add 500 ml water and let it boil. Finally, add 2 cups of Basmati rice. Let the rice grains cook for about 75%
  5. Consequently, in a separate pot, make a layer of roasted chicken, add yogurt; half cup of cashew nuts & raisins, and the sugar, and mix well. Next, add roasted onions and tomatoes, and top of that layer add a layer of rice. Finally, add left over onions and cashew nuts & raisins on top of it, and some chopped cilantro.
  6. Close the lid of the pot air tight, if possible, and let it cook on medium heat for 45 mins
  7. Serve warm
